Ingredients:

  • 2-3 beets, roasted or boiled
  • 1/4 cup goat cheese, crumbled

Instructions:

Roast or boil beets: Wash beets and place them in a foil packet or a pot of boiling water. Cook until tender, about 45-60 minutes. Let cool before peeling and slicing.
Assemble salad: Place sliced beets in a bowl. Add crumbled goat cheese and toasted walnuts.
Make the dressing: In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
