Ingredients:

  • 2 large zucchini
  • 1 cup all-purpose flour
  • 2 large eggs, beaten 
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions:

  1. Prepare the zucchini: Cut the zucchini into thin, even strips.
  2. Set up your breading station: In three shallow dishes, place the flour, beaten eggs, and a mixture of Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Coat the zucchini: Dip each zucchini strip in the flour, then the egg, and finally the Parmesan mixture.
  4. Bake: Arrange the coated zucchini strips in a single layer on a baking sheet lined with parchment paper. Spray with olive oil. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown and crispy. 
  5. Serve: Serve immediately with your favorite dipping sauce, such as marinara or ranch.
